Gingerbread Cookies with No Rolling Pin
Don’t you love the time of year you get to eat cookies? Oh dear, January will come soon enough. But for now, it’s HOLIDAY BAKING (and eating) season!Grain-free Gingerbread cookies can be in your Holiday Gifting Plan or in your tummy - you decide.

Gather Your Ingredients:
- 1/3 cup oil (can be coconut, palm shortening, avocado
(Or if you want to use butter use 1/2 cup) - 1 Tbls molasses (optional)
- 3 Tbls water. 4 Tbls if no molasses. And if using butter, you will only need 1 Tbls of water)

Make Grain-free Gingerbread CookiesHeat your oven to 350 Mix your oil of choice (soften or melt any oil that is solid at room temp) and water and molasses (if using). Use your hands to form a solid dough ball. If it feels too dry, add a small amount of water (like 1/2 tsp) until dough forms. Use a spoon or a scoop to drop dough onto cookie sheet, then press flat. Bake for 12-15 mins.If you have thicker cookies, they will need 15 mins. If you like them soft, cook them less. Let them cool on the cookie sheet for a minute before you move them. They will be crumbly if you handle them too quickly out of the oven. |
