Gather Your Ingredients
- 4 eggs
- 2 cups pitted cherries (I used 1 lb bag of frozen cherries)
- 1/4 cup oil
- 1/4 cup maple syrup
- 1/2 tsp almond extract (optional)
- 1 package of Other Foods Pancake Mix
Make Muffins
- Heat oven to 375 degrees
- Mix together the oil, syrup, and any liquid from the cherries
- Add the Pancake Mix and blend throughly
- Pour in cherries and mix into batter
- Spoon into muffin liners and bake for 30-35 mins
